Balkánský sýr ((英語:Balkan cheese)) is a type of white brined cheese produced in Czech Republic and Slovakia. It is a salty semi-hard white cheese, analogous of the Bulgarian sirene and the Greek feta. Usually it is not matured ((チェコ語:nezrající)) and it is produced only from cow's milk.
